Luncheon For Harvest Day
Eumundi chef Max Porter is well known on the Sunshine Coast for
his Native Sun Cruisine, often inspiring schools and providing
catering services under his business Food of No Fixed
Address.
His popular events include barbecue classes titled Fellowship of
the Onion Rings and an all-female Chick on Heat.
"The paddock to plate movement is nothing new under the sn," Mr
Porter said.
"But it's all about moving forward."
He said every food caulture in the world was concerned about
where their food came from, but in Australia people like him were
re-educating the community.
"Killing chickens isn't about the macabre, but the mirth," Mr
Porter said.
"We used everything - the bones make stock for the soup, and the
rendered chicken fat was used for cooking because it is just 9%
saturated fat whereas butter is 22%.
"Nothing was wasted and everything was enjoyed."
